Decadent, Gooey Chocolate Fondant

What is a chocolate fondant?
Chocolate fondant is a small cake, fit for one person that is left semi-liquid in the middle. It is commonly called a Choco Lava cake and is reminiscent of Domino's selling them in India. Fondant comes from the French word "fondre" meaning "to melt".
Important Tips?
1. Make sure your ramekins are well greased with fat (preferably, butter) and add an extra layer of surety dust with some cocoa powder for a easier release later.
2. Melt the chocolate over a bain-marie or simply put a bowl over a pot of heating water. Make sure the bowl is not touching the water or else the chocolate will seize (yes, chocolate has a heart too!).
3. Make sure all your ingredients are room temperature i.e. the ambient temperature in your house. This will ensure easier mixing and give you the best results.
4. Don't overmix! Seriously, don't! The most common reason for dense cake is overmixing. Mix only until the flour is no longer visible.

EQUIPMENT:
- Heatproof Bowl
- 4 Ceramic Ramekins

Ingredients:
100 grams dark chocolate
1/3 cup salted butter, room temperature
1 tsp kosher salt
1/4 tsp vanilla extract (or essence)
2 eggs, room temperature
1/4 cup + 2 tbsp granulated sugar
2 tbsp all purpose flour
Procedure:
Grease 4 ramekins with butter and cocoa powder.
Melt chocolate and butter over a bain-marie.
Take off from heat, add in vanilla extract.
In another bowl, mix together eggs and sugar until combined.
Add chocolate to the egg mixture.
Add in the flour.
Bake for 8-9 minutes.
